0ördeği temizledikten sonra iyice yıkayın. kağıda sarıp kurutun. baş ve işaret parmağınızla ördeğin derisini iyice çimdikleyip, yağını ve derisini yumuşatın. ördeği bir fırın tepsisine koyup, üzerine kaynar su dökün. suyunu süzdükten sonra, iki üç saat havadar bir yerde kurumaya bırakın. çinliler bütün bir gece kurumaya bırakıyormuş, ben üç saat beklettim. ördeği ne kadar uzun’zaman kurumaya bırakırsanız o kadar derisi yumuşak olur. fırına sürmeden önce her yanını biraz sonra tarif edeceğim sosla iyice bu-layın. (sosun yapılışı: fi çorba kaşığı bal, elma sirkesi, nar ekşisi, domates salçası, zeytinyağı, tuz, karabiberi bir bardak kaynar suda iyice karıştırın.) fırını kızdırıp ördeği fırına sürün. i̇ki saat kadar pişirin. pişip pişmediğini anlamak için buduna bir şiş batırın. şiş kolay batıyorsa pişmiş demektir.
taze soğanların yeşil kısımlarından iki buçuk santim bırakarak kesin. sonra soğanları boyuna ince ince doğrayın. sarımsaklı yoğurt, biber salçası ve ketcabı ayrı ayrı tabaklara koyun. bir tabağa cacık yapar gibi doğradığınız salatalıkları koyun. i̇ster hazır aldığınız, ister evde yaptığınız gözlemeleri bir ekmek sepetine koyarak hepsf-ni sofraya getiriniz. en son fırından çıkardığınız kızarrrhş pekin ördeği’ni sofraya getirin. ördekten kestiğiniz ufak parçaları gözlemelerin içine koyup, zevkinize göre sofradaki hazır biber salçasından, sarmısaklı yoğurttan, soğandan, salatalıktan istediğiniz kadar alarak, dürüm yapıp afiyetle yiyi - 28.
